I've done this 3 times the past week (once doubled), and it's just so good, I never get to take a picture before it's gone.
Great for a light dessert, but equally good as a fruity dinner or breakfast.
4 peaches
55g almonds
25g brown sugar
20g oats
cinnamon
a pinch of salt
45g cold butter, cubed
Heat the oven to 170 C (150 fan). Wash & halve the peaches, removing pits, then put them into a baking dish, cut side up.
Grind almonds & sugar together in a food processor, then add the oats & cinnamon & salt, grind again, then add the cubed butter, grind once more until it forms a coarse crisp. Spoon the mixture into the peach halves (approx. 1 tbsp / peach half), then put into the oven.
Bake until brown &soft (about 1 hour).
Serve as it is, or with some sour cream.
