900g beef mince
250g dried 10bean mix, soaked for 1 hour
1 medium onion, chopped to small cubes
1 carrot, chopped to small cubes
1 big clove of garlic
1 small chilli
1/2 tsp chili flakes
4 tsp dried oregano
1 small stick of cinnamon
330ml bottle beer
2x 400g can chopped tomatoes
1-2 can (from the tomatoes) water
salt & pepper
olive oil
To serve:
lime wedges
sweet potato fries
spinach
Pour the beans and water to a pot and cook for 1 hour. Add extra water if necessary. When done, pour into a sieve (discard the cooking water).
Heat oil in a medium-sized pot. Add the onion and carrot and cook for 5 minutes, until translucent. Add garlic, chili flakes, oregano, cinnamon and salt and cook for 2 minutes, until deeply fragrant. Add beef and cook, stirring frequently until it becomes mostly white. beer and scrape up any bits stuck to the pot. Boil until reduced by half.
Add tomatoes, beans, dried chilli and a smaller amount of water if needed. Bring mixture to a full boil, then reduce heat to a very low, gentle simmer, place a lid on your pot, and cook for 1/2 to 1 hours, until the beans are tender, stirring occasionally.
Serve with lime wedges, sweet potato fries and spinach leaves.
