My go-to lunch when I simply don't want to spend time in the kitchen.
8 chicken drumsticks (or thighs)
some seasoning
olive oil
Preheat oven to 170C fan (190C normal).
Clean and wash the drumsticks if needed, than cut slashes into the chicken with a sharp knife. Rub with the seasoning generously. Place the pieces in a ceramic baking dish (or whatever you have), pour over some olive oil, than bake for 50 mins (or until it's ready), plus 20 mins in 190C fan (210 normal).
Serve with leafy greens or a salad + some rice if needed.
Seasonings I've tried: chicken tikka, salt+pepper (+added parsley and garlic butter for the last 20 mins).
